Stuffed Wild Goose
Ingredients:
1 large goose
1/4 cup butter
2 cups uncooked rice
1/2 cup chopped onion
1/2 cup chopped celery
1 can mushrooms
2 cans chicken broth
1 tsp. Parsley
1/2 tsp. Thyme
1/2 tsp. Pepper
1 tsp. Garlic powder
1 tsp. Onion powder

Directions:
For stuffing, melt butter in large pan. Add rice, onion, celery and mushrooms. Sauté until rice is lightly browned. Add chicken broth and seasonings. Cover and let simmer for 20 minutes or until rice is tender. Remove from heat and let sit until stuffing is cool enough to handle.
Stuff goose and place in a roasting pan with the breast side up. Cover breast with bacon slices and roast for 25-30 minutes per pound.
