Duck Wrapped in Bacon
Ingredients:
1 Wild Duck
3 Cups cubed, dried bread
1 tsp. sage
1 tsp. onion salt
1-2 tsp. pepper
1 tsp. Garlic Powder
1 stalk celery
1 Tbsp. minced onion
1 Egg
1 Cup Water
1/4 Cup Butter (Melted)
4 slices bacon

Directions:
Place cubes of bread in large bowl, then sprinkle on sage, onion salt, pepper, garlic powder and add celery & onion. Now mix together egg, water and butter and pour over bread mixture to Moisten. If too dry, add more water. Stuff dressing in cavity of duck and wrap duck in bacon strips, holding in place with toothpicks. Place in roaster in 325 degree oven for approximately 1 1/2 hours. Keep an eye on it so it does not get too dry or overly done.
